He graduates from the Ibero-American University in México, Gerardo Rivera is the Executive Chef of the Hotel Fiesta Americana Grand Los Cabos, and Corporate Chef of the Posadas Group.

Rivera was an apprentice of the famous Chef Olivier Lombard, of French origin and nationalized in Mexico, who was the founder of the Vatel Club México, which aims to value, promote and ennoble the culinary activity in Mexico.

Passion, professionalism, and order” are words that according to this chef represent his kitchen. His references are Mexican, French, Italian, and Spanish cuisine, which have an influence on some of his dishes.

Among some of his famous preparations that led him to be featured on the show Sabores de Mexico from El Gourmet channel are: stuffed hogfish and nopal stew, marinade of grouper and cabuche (buds from the red biznaga), Caribbean-style ceviche, Caribbean tatin, seafood casserole in green sauce, tequila cream, enchiladas with peanut sauce, and huitlacoche soufflé.

Chef Rivera is a member of L’Académie Culinaire de France, Master Chef México, and a member of the Vatel Club of Mexico as President in Baja California Sur. He has also occupied other renowned positions such as being a culinary chef consultant for Nestlé Foodservices.

One of his greatest achievements was to position México in the international culinary contest Bocuse D’or, where he obtained the ninth place globally, and a competition in which he has served as a jury after that. This chef has opened different restaurants in the City of Mexico such as fenêtre and Sales y Soles, and in his own words his secret is “perfection on preparations and the respect for the fresh and local ingredients.”
